It may be that olive oil is one of the safest oils available for cooking and other purposes today. Olive oil is best used raw or for light saute cooking only. It doesn't stand up to high temperature cooking very well. For that use coconut oil or ghee. Of course nowadays all corn and vegetable oils are suspect because they are more than likely genetically modified and dangerous. Canola oil, margarine are totally unacceptable as human food. So how do we get olive oil? Here's how its done...
